At Four Winds Fine Foods, we love food. And we want you to love the food you eat. Below are a few of our favorite recipes that we’d love for you to try.

These unique Feta Cheese Garlic, Pesto and Sundried Tomato spreads with a hint of parsley and lemon are bursting with flavor. Perfect for dipping or spreading on fresh or cooked vegetables, crackers or crusty bread. There are many delicious applications such as over a garden salad or as a sandwich spread. Use as a side for steak or any cut of beef, dress a hamburger – fantastic with baked or mashed potato. Baste roast chicken or turkey. Wonderful with fish and shellfish. Easy recipes include making a salad dressing, as an ingredient in pasta salad or as a filling for chicken cordon bleu. These are truly original Mediterranean recipes.

There are many applications for these fabulous feta spreads. A few suggestions are listed here, but really your imagination is the limit. Using these Four Winds Fine Foods Feta Spreads will take any ordinary snack, dish or meal to the extraordinary!

  • Use any or all flavors as a sandwich spread, including hamburgers. For a more gourmet idea, use toppings on your sandwiches that work well with your choice of feta flavor. Examples – sundried tomatoes with the sundried tomato feta or a nice prosciutto fresh mozzarella cheese and fresh tomato with Pesto Feta Spreads/Dip as your spread and garnish with a few fresh basil leaves.
  • Instead of mayo use one of the Four Winds Fine Foods Feta Spreads in chicken salad, tuna salad or add to your potato salad recipe.
  • Try using Garlic Feta Spread/Dip instead of Béarnaise sauce with your grilled steak.
  • Makes a fantastic shrimp cocktail sauce or as a dip/accent for any steamed or fried seafood. Oysters on the half shell, fantastic!
  • Use over steamed vegetables such as broccoli, cauliflower, potatoes or asparagus. It also makes a fantastic fresh raw vegetable dip.
  • A fantastic addition to any pizza or when making hot appetizers such as bruschetta.

Pasta Salad

This is fantastic served with a steak or grilled chicken. It makes a very nice entrée on its’ own by adding slices of grilled chicken or ham. Serves 6 as a side or 8 as an entrée.

Ingredients:

  • 8 oz Penne Pasta (or any cut) boiled according to pkg. & drain.
  • ½ red onion sliced
  • 4 oz. marinated sundried tomatoes drained and chopped
  • 2 x 7oz. container Four Winds Fine Foods Sundried Tomato Feta Spread/Dip (any flavor you choose)

Directions

  1. Pour pasta into a 2 qt salad bowl;
  2. Add onion and sundried tomatoes;
  3. Add Four Winds Fine Foods Sundried Tomato Feta Spread/Dip and toss to coat the pasta;
  4. Optional add 1 ½ cups sliced grilled chicken or ham
Pasta Bake

This dish is a perfect side dish to complement any entree. Taking the ordinary to the extraordinary! Serves 6

Ingredients:

  • 8 oz Penne Pasta (or any cut) boiled according to pkg. & drain.
  • 1 8 oz. jar marinated artichokes (drained)
  • 7 oz. container Four Winds Fine Foods Artichoke Feta Spread/Dip
    (any flavor you choose)
  • 4 oz. grated Parmesan cheese

Directions

  1. Place boiled pasta in 9×9 baking dish
  2. Add Four Winds Fine Foods Artichoke Feta Spread/Dip and toss to coat the pasta
  3. Add drained artichokes
  4. Top with Parmesan Cheese
  5. Bake 20 min @ 350 degrees
Spinach Salad with Feta Dressing

A salad that will complement almost any entrée or be a perfect light meal on its’ own. An ordinary salad becomes extraordinary! Serves 6 as a side.

Ingredients:

  • 8 oz. Baby Spinach
  • ½ red onion sliced
  • 2 small ripe tomatoes chopped
  • 1 recipe Four Winds Fine Foods Walnut Feta Dressing

Directions

  1. Place Baby Spinach in a medium salad bowl
  2. Add onion and tomatoes
  3. Gradually add Four Winds Fine Foods Walnut Feta Dressing to your liking
  4. Toss and garnish with Walnut pieces
Twice Baked Potato

This simple recipe takes an ordinary potato to an extraordinary potato. Your family and friends will surely want your secret recipe.

Ingredients:

  • Bake Potatoes – ½ potato for each guest – allow to cool;
  • 7 oz container Four Winds Fine Foods Feta Spread/Dip. One container will be enough for 3 potatoes (Choose any flavor or serve a variety);
  • 8 oz. shredded sharp cheddar cheese.

Directions

  1. Cut each potato in half long ways.
  2. Scoop out the potato into a medium mixing bowl, being careful not to tear the hull of the potato.
  3. Mix Four Winds Fine Foods Feta Spread/Dip with the potato until well blended.
  4. Re-fill each potato half, top with cheddar cheese and return to a 350 degree oven for 15 to 20 min.
Chicken Gordon Bleu

Ingredients:

  • 6 bones/skinless chicken breast (in zip lock bag, pound thin)
  • 24 thin slices of Prosciutto (Italian ham)
  • 2 x 7oz. containers Four Winds Feta Spread/Dip-Garlic or Pesto exceptional!
  • Extra Virgin Olive oil for basting

Directions

  • On a cutting board place 4 slices Prosciutto overlapping to create a rectangular bed;
  • Trim each chicken breast to fit on the Prosciutto;
  • Place a chicken breast on each of 6 prosciutto beds;
  • Spread 1/3 container of Four Winds Fine Foods Feta Spread/Dip, of your choice, onto chicken;
  • Roll the Prosciutto over the chicken and feta spread/dip having the seam on the bottom and tuck the sides of the Prosciutto under;
  • Place the rolls into a 9 X 13 backing dish and brush each roll lightly with EVOO;
  • Bake 45 min @ 350 degrees or until chicken is done.
Baked Fish

This recipe will create a delicious seafood entrée that will please your guest or your family and have them wondering, what the secret ingredients might be.

Ingredients:

  • Choose any mild filet of fish that you like
  • Four Winds Fine Foods Feta Spread/Dip. Garlic, pesto or jalapeno are great choices (the amount will depend on the number of filets)
  • Black pepper

Directions

  1. Spray a small amount of olive oil on a baking pan;
  2. Place your filets on the baking pan;
  3. Spread your choice of Four Winds Fine Foods Feta Spread/Dip, about ¼ in., over the fish. (Either garlic, pesto or jalapeno are fantastic);
  4. Sprinkle black pepper over the fish.
  5. Bake 350 degrees for about 20 min. You want your fish to be flakey not over cooked.
Potato Casserole

This dish is a perfect side dish to complement any entree. Taking the ordinary to the extraordinary! Serves 6

Ingredients:

  • 2 lbs. potatoes cut into 2 inch cubes boil until tender;
  • 2 x 7 oz. containers Four Winds Fine Foods Garlic Feta Spread/Dip;
    (any flavor you choose)
  • ½ cup sharp cheddar cheese.

Directions

  1. Drain potatoes and pour into a 9×9 casserole dish.
  2. Fold, Four Winds Fine Foods Garlic Feta Spread/Dip gently into the potatoes until the potatoes are coated.
  3. Top with the sharp cheddar cheese.
  4. Bake 20 min @ 350 degrees.
Walnut Feta Salad Dressing

This dressing is so incredibly easy and absolutely delicious!

This recipe is delicious using any of the Four Winds Fine Foods Feta Spreads/Dips. You will want to choose a garnish that works well with the feta that you choose.

Ingredients:

  • 7 oz. container Four Winds Fine Foods Walnut Feta Spread/Dip;
  • 1/3 cup Extra Virgin Olive Oil;
  • 1/4 cup mild or seasoned white wine vinegar;
  • 1/4 cup walnut for garnish on your salad.

Directions

  1. Empty Four Winds Fine Foods Walnut Spread/Dip into small mixing bowl.
  2. Add EVOO and vinegar alternately until you have a consistency of a traditional salad dressing.
